As for the island on the Mediterranean Sea, the traditional cuisine must include seafood – and it does. Locals grill octopus, squid, sea bream, and red mullet, then finish them with lemon and sea salt. Grilling is common, though locals also prepare seafood soups and stews. Cypriot meze is often ocean-focused, offering fish roe salad, squid, and small fried fish.

Despite regional richness, fish consumption in the U.S. is relatively low, more secondary after meat and regional. In New England, cod, clam, and lobster are icons with ‘clam chowder’ and ‘fish fry Fridays’ tradition. Salmon is vital in the Pacific Northwest and Alaska; catfish, crawfish, redfish, and shrimp are key in Southern cuisines. Milk and dairy play an important role in Cypriot cooking. It’s striking that such a small island produced a cheese as widely known as halloumi. This semi-hard, unripened, brined cheese, from goat’s and sheep’s milk, has been part of local life for centuries.  Anari is another key cheese. Soft and similar to ricotta, it works in both savory and sweet dishes and is often served with honey. Yogurt is a staple, used in cooking and served alongside rich meats.

The U.S. has one of the highest milk intakes, unlike many regions. It has a foundational but shifting role.  The cheese consumption, though, is not declining. In the U.S., cheese is often melted on burgers, pizza, sandwiches, nachos, casseroles, and macaroni. Texture and meltability are prioritized over aging or flavor complexity. Americans are among the top global consumers per capita, especially of mozzarella (due to pizza), cheddar, and processed slices.  Unlike in Europe, it’s rarely eaten as a course on its own; it’s usually integrated into other dishes.

Olive oil is a primary source of fat for salads, grilled veggies, meats, and bread dippings. Some seed oils are also used, like sunflower oil, but to a lesser extent.

Many Cypriot desserts rely on semolina or flour, sugar or honey, almonds, walnuts, sometimes fruit, rose-water, or mastic. These give sweets a warm, aromatic,  nutty or floral flavour — not overly rich, but comforting. You’ll find desserts that are crunchy outside and soft inside, flaky and nutty, dense and chewy, or silky and light.

Peanut butter is the taste of American childhood – pretty much every kid grew up with peanut butter and jelly sandwiches in their lunchboxes; this nostalgia runs into adulthood. It’s one of those uniquely American foods that gets used in everything; no surprise, the U.S. is also the world’s biggest consumer and exporter.

Cypriots ground up their flavors with fresh ingredients. They start with ripe tomatoes, cucumbers, lemons, greens, olives, and herbs that grow like weeds in the countryside. When they season seafood, it’s often just lemon, sea salt, and olive oil. Simple. Confident.

Herbs define the cooking style. Fresh mint gets heavy use in Cypriot cooking. It’s mixed into meatballs keftedes, salads, cheese pies. Often used alongside cinnamon. Oregano, parsley, and thyme add aroma to grilled meats.

Spices are used sparingly, except for coriander, which gives a warm citrus note in pork dishes, sausages, and breads. Aromatic onions and garlic form the base of many dishes, and bay leaves are often added to stews and rice. Salt, acid, and fat balance play a big role. Halloumi brings salt and chew. Olives bring punch. Lemon brightens almost everything. Olive oil ties dishes together. Many traditional meat dishes rely on red wine to build flavor.

Mahlab, with its sweet, almond-like flavor, features pastries; sesame seeds and tahini dips are also loved. Honey, preserved fruits sweeten desserts, and rose water provides fragrance.

There’s also a love of contrast. Hot grilled meats with cool yogurt or tzatziki. Crunchy salads next to tender braises. Salty cheeses with sweet watermelon in the summer. That mix keeps the food lively and refreshing.

SAUCES

TAHINI / TASHI sauce –  tahini, lemon juice, garlic, cumin, olive oil and water. This sauce is served with grilled meats.

TALATOURI is Cyprus’s version of tzatziki. The key difference is that it uses fresh or dried mint and lemon juice instead of dill. The base is yogurt mixed with grated cucumber, garlic, and olive oil.

TARAMASALATA rounds out the trio. It’s made from cod roe, milk-soaked bread, potatoes, and olive oil, blended into a puree.

United States of America

SEASONINGS

American seasoning stands out globally by its bold flavors that often incorporate heat and smokiness. Americans also have a clear love for richness and intensity – they gravitate toward satisfying flavors that deliver immediate impact. This is illustrated by fat-forward dishes (buttery steaks, creamy mac and cheese, loaded burgers), sweet-savory combinations (maple bacon, honey BBQ), and “maximalist” flavor profiles where more is better. Not as central as fat or smoke, vinegar-based BBQ sauces, pickles, and citrus marinades add a contrasting element to the richness.

Americans have this unique relationship with umami-rich processed flavors – they’ve embraced things like aged cheeses, cured meat, fermented sauces, and even MSG-heavy snack foods in ways that create this very distinctive “American taste”.

The other key characteristic is accessibility – American palates favor immediately recognizable and satisfying rather than acquired tastes. It’s a cuisine built on bold satisfaction rather than complexity.

Most American pantry essentials are kosher salt (coarser, milder than table salt), black pepper, garlic, onion, chili powders, paprika, dried oregano, and cinnamon.

Some traditional spice blends include:

OLD BAY – a classic from Baltimore, this blend features celery salt, paprika, black pepper, and other spices, widely used for seafood and snacks.

CHILI POWDER – ground dried chili peppers, cumin, garlic powder, oregano, and paprika. In the U.S., “chili powder” usually means this seasoned blend used in chili con carne. In many other countries, “chili powder” refers simply to pure ground dried chili peppers, without added spices.

EVERYTHING (BUT THE) BAGEL – combines roasted sesame seeds, garlic, onion, poppy seeds, and sea salt, popular as a savory topping on bagels and beyond.

BARBECUE RUBS – various rubs combine spices like smoked paprika, chili powder, cumin, brown sugar, and salt, tailored for ribs, pork, and grilled meats.
